At Prosper Plaza, Summer Moon's posted weekday hours have the drive-thru opening at 6 a.m. A few miles west, on a Saturday, Moka & Co. is still pouring Yemeni coffee at 10:45 p.m. Both sit on University Drive, and neither was part of Prosper's coffee routine a year ago.
That stretch is the real story of Prosper's 2026 coffee openings. Community Impact counted five shops opened in Prosper and Celina this year, with three more on the way. Look at where the Prosper ones landed and when they keep their doors open, and a pattern shows up. The US 380 corridor is set up to cover almost the whole day. West First Street has two small, locally owned shops. And the next openings are heading north to Frontier Parkway, where new homes and an extended tollway are on the way.
The early shift is moving to Custer Road
Summer Moon set its Prosper grand opening for Nov. 7 at 4325 E. University Drive, Suite 10, according to Community Impact. The store's location page puts it in Prosper Plaza, off US 380 near Custer Road. The posted hours are 6 a.m. to 8 p.m. on weekdays and 7 a.m. to 6 p.m. on weekends.
Those 6 a.m. weekday openings are the earliest on this list. The page also lists a drive-thru, indoor seating, free Wi-Fi and order-ahead. Summer Moon is a DFW chain, and it's known for oak-roasted coffee and Moon Milk, its sweet cream. The page also describes the shop as minutes from Stonebridge Ranch, the Gates of Prosper and the neighborhoods of east Prosper and west McKinney. That's a commuter's location, at a 380 intersection that people on both sides of the city line already drive through.
Before Prosper Plaza, the early drive-thru option in town was the Dutch Bros at 520 S. Preston Road, which Community Impact lists as Prosper's existing location. Summer Moon's Prosper Plaza store is set up to give east Prosper a drive-thru on 380 itself.
First Street keeps the hometown counter
Six Sips Coffee Co. didn't move to the highway this year. It added a second shop half a block from its first. The original is at 2770 W. First St., Suite 15. On Feb. 21 the family-owned shop opened a second location inside Rock Creek Church at 2860 W. First St., Community Impact reported. Co-owner Ashley Cotten told the outlet that the church location has a slightly smaller menu than the main shop, with pastries, espresso and tea.
On its own site, Six Sips describes itself as a family-owned shop focused on organic coffee and allergy-friendly goods. In a year when national and regional chains filled most of the new storefronts along 380, the First Street expansion grew out of one local business on one local street.
Another hometown link turns up just over the city line. 1418 Coffee opened two Celina locations this summer, at 565 S. Preston Road and 2287 N. Preston Road. Community Impact notes that the pastries at both are made at the company's off-site bakery in Prosper.
The pastry case went to the west end of 380
The midday addition is mostly about baked goods. 85C Bakery Cafe soft-opened Oct. 8 at 5720 W. University Drive, Suite 10, at the far end of Prosper's 380 frontage from Summer Moon. The Taiwanese chain sells sweet breads, cakes, cookies and buns, along with tea, coffee, matcha and boba.
During the soft opening, Community Impact reported hours of 10 a.m. to 4 p.m., Thursday through Monday, with that schedule set to run through Nov. 6. Because that soft-opening schedule was temporary, check the 85C site for current hours before planning a weekday pastry stop.
So west 380 has the bakery, east 380 has the early drive-thru on the way, and between them sits the shop that stays open latest.
After dark, University Drive has one answer
Moka & Co. opened June 16 at 2281 E. University Drive, Suite 10. Its drinks are built on Yemeni coffee tradition. Mufawar is spiced with cardamom, and maleki is made with honey and coffee husks.
The hours set it apart. Moka & Co.'s Prosper page lists a 10 p.m. close Monday through Thursday and on Sunday, and 11 p.m. on Friday and Saturday. Here it is next to the schedule Summer Moon has posted for its Prosper Plaza store:
| Day | Summer Moon, Prosper Plaza, posted hours | Moka & Co., 2281 E. University Dr. |
|---|---|---|
| Monday to Thursday | 6 a.m. to 8 p.m. | 7:30 a.m. to 10 p.m. |
| Friday | 6 a.m. to 8 p.m. | 7:30 a.m. to 11 p.m. |
| Saturday | 7 a.m. to 6 p.m. | 8 a.m. to 11 p.m. |
| Sunday | 7 a.m. to 6 p.m. | 8 a.m. to 10 p.m. |
On weekdays, Summer Moon's posted opening is 90 minutes before Moka & Co.'s, and Moka & Co. stays open two hours later. On Saturdays the gap is wider. Summer Moon's posted close is 6 p.m., and Moka & Co. keeps pouring for five more hours. With both shops on these schedules, a stretch of 380 that had neither at the start of the year covers coffee from 6 a.m. to 11 p.m. on a Friday.
Moka & Co. is also the first of two Yemeni coffeehouses on Prosper addresses this year. The second is going in at the north edge of town.
The next coffee corridor is Frontier Parkway
Frontier Parkway forms much of the line between Prosper and Celina, and it's where the next two coffee projects are going. Here's how each one stands:
- Haraz Coffee House, 2720 W. Frontier Pkwy. The Yemeni chain's menu includes Harazi Mufawar, made with coffee, cardamom and cream, along with Adeni chai, espresso drinks, matcha and teas. Community Impact first reported a summer 2026 target. In late October, The Celina Current reported that it was expected to open in November 2026.
- Dutch Bros Coffee, 1500 W. Frontier Pkwy. A filing with the Texas Department of Licensing and Regulation describes a $600,000 interior remodel of a 986-square-foot space. Construction is projected to run from October 2026 to April 2027. It would be Prosper's second Dutch Bros, after the one on South Preston Road.
Haraz is going into The Creeks at Celina, a retail center at the northwest corner of Dallas Parkway and Frontier Parkway. The Prosper-Celina Journal reports that the center is about a half-mile east of an H-E-B and roughly a mile west of Prosper ISD Stadium. Firm Foundation Dental, Capo's Pizza and Pasta, inLife Wellness and Knockouts Haircuts & Grooming all opened there in 2026.
The developer, Weitzman, plans restaurant end caps overlooking a six-acre pond. Weitzman projects about 28,500 single-family homes and 3,700 multifamily units within a three-mile radius at full buildout. Frontier Parkway carries nearly 12,000 vehicles a day at that intersection. The North Texas Tollway Authority's $460 million, six-mile extension of the Dallas North Tollway through Prosper and Celina is expected to be finished in late 2027.
Those numbers explain the move north. On 380, Summer Moon, Moka & Co. and 85C took spots on a highway people already drive. Haraz and the second Dutch Bros are taking spots on a parkway that is still filling in, near homes that are still being built and a tollway extension due in late 2027.
For now, the longest coffee day in Prosper is on University Drive. That's Summer Moon's posted 6 a.m. drive-thru near Custer Road, 85C's pastry case on the west end and Moka & Co.'s mufawar until 11 p.m. on Fridays and Saturdays. The Six Sips counters on First Street are a few blocks south, and Frontier Parkway is next.
If your coffee route is about to start from a new address in Prosper, or you're weighing which side of town fits your mornings, The DiBella Team knows these corridors from 380 up to Frontier Parkway. Your path to buying or selling starts here, and we'll gladly give you the local version, down to the drive-thru line.
